vegetable broth

Amanda used this mix of vegetables, but feel free to use what you have on hand. It's a great way to use up vegetable trimmings.
Ingredients
- 2 carrots
- ½ potato
- 1 onion
- Leek trimmings
- Broccoli stem
- Artichoke leaves (1-2 handfuls)
- Peppercorns
Instructions
- Cover vegetables with cold water and bring to a boil, simmer for about 45 minutes or until flavor has developed (made about 750mL of broth)
