Green Bean and Potato Salad

Ingredients

Instructions

  1. Peel the potatoes and cut them into 2 inch chunks.
  2. Trim the green beans, and cut them into 1 inch pieces.
  3. Bring a large pot of salted water to boil. Add the potatoes and after about 5 minutes add the beans. When done, drain and put them back into the pot.
  4. While the veg are cooking, pour the olive oil into a small frying pan and heat to medium. Add the garlic, and after about 30 seconds the olives. Stir a bit, then turn off the heat.
  5. Add the contents of the frying pan to the drained veg, and stir. Add the basil and lemon juice, salt and pepper. Serve warm or room temp.
